30 Nov Cool, healthy and crunchy Canapé snacks

This recipe is inspired from the famous Canapé appetizer, only instead of bread as a base, I use cucumber. The reason is pretty simple, cucumber, in addition to being my favourite vegetable, only has 16 calories per 100 grams!

For the base (10 pieces)

Cut a medium cucumber or half a long cucumber into circular slices (not too thick) and ad just a pinch of salt.

Love My Kilos Tip: Don’t remove the peel of the cucumber, as it contains most of the fibre and vitamin K. Just make sure to wash it thoroughly.

Now, I like to switch it up every time, so I’ll give you a few different ideas for the toppings.

Idea 1: Going Mediterranean

Ingredients

  • 1 tomato
  • 50 grams feta cheese
  • Dried oregano/parsley
  • 1 tablespoon olive oil

Kitchenware

  • 1 small bowl
  • 1 knife
  • 1 tablespoon

Preparation

  1. Dice the tomato into little cubes and leave them aside for a minute or two
  2. Crumble the feta cheese into the small bowl
  3. Add tomato cubes in the bowl
  4. Sprinkle oregano
  5. Add 1 tablespoon olive oil and mix
  6. Place 1 tablespoon of the mixture on every cucumber slice

Calories: 29kcals per piece

Protein: 0.7g per piece

Idea 2: Cheesy experiment

Ingredients

  • 50grams feta cheese
  • 50grams cream cheese
  • Lemon juice
  • Pepper
  • 1 tomato
  • (Optional) dried oregano/parsley/basil/thyme depending on preference

Kitchenware

  • Blender
  • 1 teaspoon
  • 1 knife

Preparation

  1. Dice the tomato into little cubes and leave them aside for a minute or two
  2. In a blender, add 50gr of feta cheese, 50gr of cream cheese, some lemon juice and pepper. Blend them all together until you get a creamy mix
  3. Place on teaspoon of the mix on every cucumber slice
  4. Sprinkle tomato cubes on the cheese
  5. Add dried oregano/parsley/basil/thyme (optional)

 

Energy: 23kcals per piece

Protein: 1gr per piece

 

Idea 3: The Gourmet

Ingredients

  • 50grams cream cheese/50 grams cottage cheese
  • Pomegranate seeds
  • Balsamic vinegar

Kitchenware

  • 1 teaspoon

Preparation

  1. Pour a little bit of balsamic vinegar on the cucumber slices
  2. Then spread a full teaspoon of cheese on them
  3. Sprinkle the pomegranate seeds

Energy: 14kcals per piece

Proteins: 0.4gr per piece
